The war can end different ways, this is one spoiler only.

Ulfric lost because Stormcloak armor for some bizarre reason is terrible at stopping a fully upgraded Daedric Sword. Also, his weapons can't puncture fully upgraded Daedric Armor.

I mean, COME ON!
