You don't get the point of this game...there is no "most fun character". It's all up to you, you determine how you play, how you integrate in this world. It's your story.

That said: You can get overpowered with almost every playing type (yeah even destruction mage), so do yourself a favor and don't ruin the game by abusing smithing/enchanting.

Blacksmithing/Enchanting/Alchemy with Bow or OneHand is currently "the best" in terms of raw stats. But its trivial.

Play what ever combo you find fun, which is quite possible on adept.

How does destro get overpowered without abusing enchanting? I'm not being sarcastic I'd actually like to honestly know.
