I'd probably be turning out awesome food at a mead-hall and going to bard college because that's what I do.

Just a traveler/explorer/adventurer I guess. Having a particular job would be boring, and I'd also rather not have the fate of the world rely on my character and so on. Being of special importance kind of detracts from the freedom of TES games a bit for me, why I liked in Morrowind how you didn't find out you were Nerevarine very early, and one of your first missions is one of no urgency - gear up, get experience, come back later. This gives you a lot more of a comfortable license to ignore the main quest than Oblivion or Skyrim have.

This exactly, well put.

I want to be the orc librarian at winterhold college, that way when the noob dragonborn comes waltzing in and uses 'unrelenting force' to trash my library I can toss him over the castle wall into the sea of ghosts, and then summon Chuck Norris to save the world instead. I'm sure Chuck can kill people with a whisper much like the greybeards, so he's up to the task at hand, and he wouldnt trash my library.
