How many skills should i perk up?

Even though Bethesda said they were doing away with the compulsion to start new characters every few days, I still get the "new character jitters" a lot. I try and go for the jack-of-all-trades characters who don't fall into the "Mage" or "Warrior" archetypes, but I've been worrying about perk allocation every time!

So my question is, how many skills should I decide to perk? Is it alright to miss certain perks from certain skill trees? How many perks will I have? (I know its technically 81 but how many do I have a realistic chance of getting to use?

More than one question, I know :P

If you want a Battlemage (Warrior/Mage) you can try:

Heavy Armor
Smithing
Enchanting
One Handed
Conjuration
Restoration

You should BARELY fill up a whole tree. There is no need to as most perks trees are divided even more amongst themselves.


Example:
Smithing has a left side of the tree for light armor and a right side for heavy armor. Only do one side though:
