Is having a Non-Combat character playable?

Just a thought I had about a sneaky-speech kinda character that combat takes a back burner. Has anyone done this successfully? or is it just a role-playing handicap?

Not impossible, but still hard. There are a lot of hostile characters that will harm you no matter what, bandits, dragons, etc. Always keep some companions around if that happens. But I'm telling you right now, it will be no fun. Companions are unbalanced.

Edit: Except that link above. Gotta have a lot of patient and good thinking, I think...

Saw a youchoob vid today about a pacifist character. Never killed anyone (even undead) just used incapacitating spells all the time. Looked like a lot of work, you're fighting all the way in AND out of a dungeon :D

In theory you could take the crafting skills with speech/lockpicking/pickpocketing or just anything that makes you gold, then create a lot of good armor with enchants and potions and hire a bodyguard which you would give all of the armor and potions to. Make yourself an overpowered companion to protect the noble you.

Edit: @ Those above, that Khajiit is still using combat skills. Not using combat skills != not killing creatures.

Sneak + Illusion, even invisibility and you should have no problem playing a pacifist. The guy in the video didn't use sneak as much as he could have used. An interesting play-style. Of course, a lot of stuff is impossible do without killing, so a lot of stuff will not be possible for a pacifist.
