Not much. Less than 60.

In my current run, around 50 in my inventory in OWB (arrived there with 10), and another 130 in my oven at home in Goodsprings.
Never buy a single one, as I rarely use them. Currently I'm at 17 used Stimpacks in roughly 70hrs of gaming time, and at least 10 of them went on companions.
I cover my healings needs with Sarsaparillas, Water and Healing Powder.
High Survival Skill + Chemist = no need for Stims.

About a 100 but i only play vanilla and rarely buy them cuz i like survival a lot more, when hardcoe's on, but the thing is also like hardcoe!

About 300, although I never carry more than 50-60 at any one time.

Never really went past 200. I sell them if I start to notice an excess.

No more than a hundred, they are a waste of money. In Fo3 I had over 400 at one point from trading with the Outcasts.

At one point while playing New Vegas I had 500 stimpacks...

Even more in F3.

what's the point of this? anyways over or around 300-400 stimpaks just from finding them. Their actually pathetic in every way, seeing as a 100 Survival, a Gecko Kebab or Grilled Mantis was much potent then stimmies in hardcoe mode, all for a few pounds of weight, I get to heal faster then a deathclaw can kill me.

usually the c-c-c-c-combo breaker I go for is:
Gecko steak
Gecko Kebab
Grilled Mantis
Stimpak
Bloatfly slider

boom, pretty much healing faster then most enemies can even dish out at you. you basically become immortal for 30 seconds. Kind of like taking a Turbo, but with health, instead of speed.

total 500 but I spread those over companions, and now that I'm using PN and some other mods I've been using them up like crazy.

This. The only time I use stimpaks is in the beginning, when I haven't got enough Survival skill to craft most recipes yet. The most I've got is... maybe somewhere around a hundred? I dump my loot in a few places that I sometimes forget to clean out, so I don't really have an exact number.

In New Vegas...never more than 30. I use them a good bit.
