Well if we take from the other two games, which haven't ever gone past 1.7 IIRC I would say most of the bethesda patching will be stopped somewhere before 1.9, because I don't ever recall seeing a game with 2.0 on the patch number. Other than that, yes most likely there will be an Unofficial Skyrim Patch, I'm actually pretty familiar with the makers of the ones for MW and Oblivion and it'll probably be those guys that make it...and have probably already started.
