The aritificiality of quest railroading [SPOILERS]

Let us take an example of Molag Bal quest - House of Horros.
After killing the Stendarr priest, player has the choice of either agreeing to help Molag Bal o to demand freedom.
EITHER option contiues the quest, however.
Well I fail to see logic behind this. Even though Molag Bal is 'lord of domination' etc, he clearly states that player 'can have the freedom all mortals prize so much'.
So, why the quest continues after deciding no to help Molag Bal?

There are more quests like this one, e.g. Innocence Lost. Player cannot tell the boy that he/she will not perform the assasination. Why, for the love of Mara?

Also, am I the only one being bothere by having 6-7 open quests in quest log I dont want to complete but cannot abandon?
