So I've been playing Fallout for ages, I'm no noob. But recently I've went back to play it after playing Fallout NV but I decided not to use my lvl 30 save and start a new one but now on my new one with all DLC enabled and I'm only level 5 or something and I'm hearing Three Dog taking about me finishing off the Envlave, and this is annoying me badly. It's like he's glitches with the sayings from my other save.

This happens when you have all lthe DLC's enabled when you start a new game. Check the nexus, there are a lot of mods that address this issue. Or you can just enable the DLC'S later in the game. There is also another glitch where you will start to see Enclave troops early.

I still need to but a good computer to play Fallout 3 on it, so for now I'm using Xbox 350

Can I still enable the DLC once I, say, leave the vault, I enable the DLC fro then and it should be fine?

You should be able to enable the DLC's anytime you want, but you have to enable Broken Steel before the end of the main quest.
