Depending on what tool you used for extracting, it may not be saved where you expected. IIRC the BSA Browser that comes with OBMM will save a single file directly in the folder you point it to, but if you select more than one, will use the entire logical path data, and put them several sub-folders below where you expected. Since you normally extract both rat.dds and rat_n.dds at the same time, I'd guess there's a textures folder inside texture/creatures/rat i.e it's now texture/creatures/rat/textures/creatures/rat/...
