Which races do you think will be, should be, could be or want to be playable?

The same ones as usual, though I do hope for a bit of variation, specifically with the beast races.

maybe some sort of beast race?

Have you ever played a TES game before?
It seems unlikely if they will create new Races to play, but you can be sure that they will include all the ones from past TES games.

Personally, I would love to see a Falmer race for Skyrim.

The Falmer would not be playable in Skyrim. More than likely, they'd be KoS. Hell, they probably have a smaller population than the Aleyids.
