It's a shame Diverse Ore Veins isnt a pluginless replacer

Yeah, that's impossible. Still worth the plug-in slot though. :)

Just to point out why: Bethesda only made one model for each ore-bearing rock and used that regardless of cave tileset. Craigor copied and re-skinned that model so it used the appropriate rock textures for each tileset. Nich then fixed the UV mapping for each of Craigor's meshes. Cracking work all round!
