I'll say what I've said before: as one of the "die-hard" fans of the original games, I wouldn't be interested in any sort of remake that drastically changed the gameplay around (made it real-time or somesuch...) or did any updates beyond making it prettier and enhancing the interface a bit. If it was just an update (along the lines of what they did with Sid Meier's Pirates!, for instance,) then I might be interested, but I don't know how much money I'd actually pay for it. The thing is, I already own the original games (and they're readily available for cheap all over the place at the moment) so I probably wouldn't pay more than maybe $20 for a remake of both games. (Meaning $20 for a two-pack, not individually.)
That said, I don't see much point of doing an update unless you plan on bringing something new to the table. I don't generally understand the need to remake a game just with better graphics unless you're also updating the gameplay to some extent as well. Doesn't seem to me to be worth the effort - Pac-Man wouldn't be any more addictive with 3D graphics, for example. (And many times, messing with the original setup can often result in losing the "magic" of the original game - for example any Pac-Man game ever made since Mrs. Pac-Man...)
Like others have been saying, it seems to me that if you were really going to go through all the effort, you'd be better off just working on an entirely new Fallout instead of trying to remake the old ones. I don't think you'd really end up making all that much money off the project - I would assume that many people who are that interesting in seeing what the original games were all about could look past the arguable outdated graphics and interface (if you can't, then I can't imagine you cared that much about the history of the franchise to begin with.)
And if anyone was going to make a new Fallout game with the old gameplay but prettier graphics, I'd just as well prefer that they made an entirely new story instead of retreading old ground.
Just my opinion, of course - but I don't really see the need for it. There was some interview or another with one of the Devs where they said it was probably just a matter of time before someone put out a Fallout 3 Mod of the originals done in the Fallout 3 style.
