You could play the entire playthrough with the ammo from one shopping trip! Of course, there is the slight problem of being able to afford it.

Well... You'd still have to carry all that weight around.
Apart from the beginning and ridiculous damage sponge places like OWB I have never really run out of ammo past Nipton/Novac so that Gun Runners has tons of ammo doesn't bother me, especially since they have the highest prices in the game.
