I've only played a stock class once in eight years of playing Elder Scrolls games. That was a Warrior, on my very first Morrowind character. I guess that would make Warrior my vote in the Combat category, by default. I've never played anything from the Magic or Stealth categories so I 'm not qualified to vote for those.

As far as stock classes go for sensible leveling, I've only been able to get witchhunter and spellsword to work.

I think base classes are made quite well. Most of them are able to do exactly what you'd expect of each class. Not that playable for hardcoe powergamers though.

Monk(real fan of the hand to hand because other RPGs always discourage going in without at least a dagger and in oblivion I can rub that fact in the other games as I pound away at bandits with just my fists)

I go mostly by the short summary description of what eaah class is about. If I look closely at the major skills, my eyes glaze over, my stomach starts to hurt and it reminds me why I have never played a stock class. :P
