We know why the PC is dragonborn, but asfaik we don't know why we're the last.

What makes you think this is the last?

The Greybeards weren't even sure that the hero was the only dragonborn around at the moment, just the only one they knew of.

... because he is described in every source describing him as "the Last Dragonborn".
