Do you NEED wrye mesh for this? Can I just install it like any other mod?

Also, does it add insane amounts of enemies or a good amount?

You don't NEED wrye bash for anything unless you are using conflicting mods. If have any mod that edits spawn locations then you should probably use it. The amount of enemies it adds depends on what you set it to. I think you need MCM to adjust the settings.
