But I would also like something that would increase oppurtunity of

bears, wolves, deer, --etc etc animals.... for hunting purposes.

http://oblivion.nexusmods.com/mods/14442 Martigen's has several plugins related to animals/ animal spawns. It also does a whole bunch of other stuff, but from what I remember the installation is very customizable, so you can ignore most of the other things it adds.

They's also a whole bunch of probably incompatible hunting changers on the Nexus, searching "hunting" brings up quite a few.
