Testing a Concept, need assistance

Presently in Skyrim I'm playing something I'm calling a Spelldrinker (or Mage Eater) class. Basic gist is Light Armor, Spellbreaker shield, Atronoch Stone, +Resist Magic Gear.

I'm thinking about recreating the class in Morrowind for a new playthrough with the game, but I'm stuck on what Major/Minor skills to pick.

I'm thinking race wise either a Nord or a Redguard would be preferable - Nord more-so mostly for the Resist to Frost and Shock. Atronoch Birthsign is obvious. But I'm questioning doing Light Armor or maybe going for Medium Armor to give a bit more protection - but I've heard Medium Armor "levels out" the higher you go.

Weapon wise...would Blunt or Long Sword be better in the long run? Also should I take Enchanting to make my own +Resist Gear (Also use a Soul Trap Weapon to keep myself well stocked with souls)?

Plus which factions would best facilitate this play style?

It's been far too long since I last sat down with Morrowind to play, and if I'm going to do this, I'd like to do it right. The basic "lore" idea behind it is akin to a Witchhunter - a warrior who, through many years of training and study, has made himself into the ultimate Anti-Magic weapon and now seeks out and deals with all who misuse the power of magic for their own ends.
