I'm setting up a back-up system for my PC and want to include the skyrim files, where are they located-directory,etc, so I can back them up,too.

Where do you have Steam installed? Default is C:\ProgramFiles(x86). That would put Skyrim in C:\ProgramFiles(x86)\Steam\steamapps\common\skyrim.
