Protection is primarily found in the 'Flesh spells as stated above, usually combined with the Mage Armor talent to make them more powerful while wearing cloth. You're not restricted from wearing Light or Heavy Armor, of course, but until you grind up Enchanting you'll be left to the mercy of finding Mage friendly random enchantments on those.
As far as a "build" goes, if you're going for a "pure" Mage, all five school trees are pretty invaluable in some regards. I tend to play my mages with Sneak on the side because it seems a wise man and scholar would know to stop, assess, and then act rather than storm in, bolts flying. The Illusion tree's "Silent Casting" makes this rather viable as well.
