I was wondering what are some easy potion recipes with some good effects?

I was always quite fond of blue butterfly wing + blue mountain flower. Both very easy to come by and makes a poison of decent value so helps level fairly quick in the beginning.

http://www.uesp.net/wiki/Skyrim:Ingredients, you can see the base values of ingredients' effects. As Eayri suggested, blue mountain flower and blue butterfly wings are probably the most common ingredients for damage magicka regen, effect that usually potions pretty valuable. Fortify carry weight and invisibility are also effects that can be somewhat easy to get that can be sold for a nice bit of gold.
