Morrowind vampires - No stages of vampirism. Attribute and skill boost dependent on which of three clans infected you. Sunlight is eventually lethal. No direct assaults but talking to most people causes them to attack. Only the mages guild and Telvanni are non-hostile and offer a few vampire specific quests. Feeding simulated by the addition of a low cost absorb health spell in your spellbook. No regenerating health from resting or sleeping, only absorb.
Oblivion vampires - Four stages of vampirism, only one strain of the disease. First game with a feeding mechanic. People automatically assault past stage three. Sunlight eventually lethal.
No associated quests except the cure for vampirism (which had several quest breaking bugs.) Skill and attribute boosts.
Skyrim vampires - Four stages of vampirism, one strain of disease. Feeding on sleeping victims, or when charmed with greater power, awake ones. 25% boost on illusion spells. Muffle effect. No longer attacked past stage three (with Dawnguard DLC), sunlight is non-lethal but health, magicka and stamina do not regenerate outdoors during daylight. No associated quests in vanilla, apart from cure.
