They probably do, but they're all laying on the cratered battlegrounds of central Europe & the Middle East. The bullpup is a completely European design, mainly favored by European nations. I know countries outside Europe have adopted bullpup designs, but it's never really been an 'American thing', so not as much in Fallout territory. The Chinese assault rifle of 2077 is basically a chinese AK of today. And the U.S. 'guns' (not EN weapons) are essentially contemporary. I assume Europe would follow suit.
That being said, a rifle like the Steyr AUG could be a really interesting Fallout weapon. It's modular, so you could change barrels (and receivers?) to fit your available ammo. A Steyr in 5.56 with "change-outs" in .308 and 9mm would add a new dynamic to long-range treks on hardcoe. And maybe the process of changing out the calibers has it's own mini-game, like lockpicking or hacking?
