Only two of my characters are likely to retire soon.
My Dunmer will be at Proudspire, with Balimund and Blaise, enjoying a quiet retirement.
My Imperial will be in Mistveil Keep, flanked by his wife Mjoll and their associate Aerin. I'll RP that they finally got tired of Jarl Maven's corrupt activities and chased her out. I doubt the Legion will kick up a fuss: who would they rather serve: a crimelord, or a Dragonborn legate and war hero?
So far I've only done a few, but the border ideas are nice. I think I'll try one.
1.) My main character, my Argonian, was an Imperial Battlemage after he was recruited from the College. When the war was settled, he retired with his wife in Proudspire serving in Elisef's court until the Legion calls upon his service again, waiting faithfully.
2.) My Bosmer, a Thalmor Agent, did his job and did it faithfully. When he found out his service was no longer needed, he became an alcoholic and over the years drank himself to death in his mostly empty house in Markarth. He knew he couldn't return to Valenwood as Skyrim had made him colder.
3.) My Imperial adventurer eventually found himself satisfied and found home in the one place that accepted him without bias after Helgen, Riverwood. He married the woman in the shop there and became the store clerk of Riverwood Trader.
4.) Finally, my Nord Dragonborn. His story is complex, but when it's finished and when he defeats Alduin, I'm going to say he died. Not then, but he had to die on his way to Sovngarde and he will be honored as a champion in Shor's hall forever as his story slowly fades.
They don't retire they just take a long vacation in the soul cairn
