The patches have made the game MUCH more stable than it was at launch. I play vanilla Skyrim, but I'm considering getting the Dragonborn DLC, and my file rarely lags. There are occasional fps drops in Riften during the middle of the day and the occasional loading screen freeze, but other than that, the gameplay is pretty smooth. My brother has all DLC's installed and a file size of over 15 mb, and it doesn't lag or freeze that often either. From what I've heard, Skyrim for most people is playable up to around the 18-24 mb range before lag, glitches, or freezing become issues on the level of pre 1.4 patched games. Some have had more problems with patch 1.9 than 1.8 though; however, I haven't noticed much difference (although I'm not running any DLC's, which seems to be one of the biggest culprits of lag and freezing for some).
Theres a reason why you get to choose which DLC you want to install off the disc. That one reason is Dawnguard. PS3 and Dawnguard do not go well together at all.
Then you are either in denial or very tolerable. We all know how the PS3 version runs... it's only a matter of time before you break.
