Are there any mods that add any of the missing Daedric Princes to Morrowind? And what about Ebonarm? He seems to have been totally forgotten.

I'm not sure if there are any that aren't mentioned in the game, can't remember. But there is more interaction than just two conversations witha stone statue hope this helps

Do you mean actual creature models of the Princes, or shrines and such?

Archmaestro Anteres was working on an actual creature for Mehrunes Dagon (around here somewhere )

I have also been wanting to make a Clavicus Vile charater/creature (I have the time to make a creature and his faithful "dog", but not the time to make a proper quest involving them; I'd love to have the character get transformed and go on quests to undo the transformations ).

Aside from these, I am not sure of others (off the top of my head from mods or WIPs), though I am sure that there are other mods out there that seek to add other Princes in some fashion.

Ebonarm isn't a Daedric Prince, he's probably an Aedra or a man-god like Talos, I'm not sure which. There's plenty about him in the Lore forum, just search for Ebonarm in there.

Also, I think the top seems a bit tight.

mephala has a shrine quest though in Vanilla. Just not a big old statue.

I would like to see the statues in Morrowind updated, and I don't just mean the textures. In particular, it'd be great if Boethiah got reimagined a little closer to his Daggerfall/Oblivion incarnations, and lost the odd spiky beard.
