What is the deal with only one item in this category. Can anyone tell me if there are any more or is it just the one?

Ps.. I have a 1000+ hours into the game and haven't come across anything else for it yet. I'm just hoping I missed something.

I searched the forums here but couldn't find any info. any help will be greatly appreciated.

Just the one. Even then, the helmet materials are rare. Only one place to get them.

Don't the 2 DLCs add more stuff in that category? Mainly Dawnguard if I'm correct.

I can't speak for Dragonborn, but Hearthfire added building materials and arrows, which is what 95% of my smithing leveling has come from. I don't recall seeing anything from Dawnguard though. Unless you can't access any of it until you actually join the Dawnguard, which I have neglected to do yet...

Only the helmet is in that category. Building materials and all that are in their own category called...Building Materials.

On console, there is only the one item, added from Dawnguard. Perhaps it was originally intended to have more added, who knows, butas it stands, just the one., so no need to keep searching.

Don't remember the name, but that in that long winding cave system full of falmer that you have to go through to get to Forgotten Vale. It's some barely seen side room that's easy to miss because it's so freakin' dark! Really hard to find! You just have to have some light and explore everything after killing the falmer in each area.

I've also heard that the bug can be mined rather than killed and looted, so you can come back later and get it again, but sadly I didn't know this and killed it.

It wasn't hostile....

I have Nord Hero Arrows in there with the Shellbug Helmet...
(And isn't the Bone Hawk Amulet in there as well?)

The Shellbug Helmet is in Misc, yes, whereas the Bone Hawk Amulet is in Jewelry.
