How do you change your familiar? and if so does everyone start out with the wolf?

You have to get the other spell. The Wolf is the most common, the Flaming Familiar (Flame Atronach) is a different, more rare spell.

The standard familiar is a wolf, no changing it whatsoever. There is, however, another familiar spell as CCNA listed, but it's just a flaming wolf iirc.

As you level up, your opponents become tougher. The wolf is pretty good at the beginning but it'll soon get killed in one hit. The progression of tougher familiars is as follows:

After the wolf, the Flame Atronach is next, but she'll eventually get put down by one shot at well. Then you'll need the Frost Atronach, followed by the Storm Atronach (check out the Atronach Forge for instructions on creating spell books for yourself instead of buying/looting them). I think the Dremora Lord is the ultimate familiar until you get to the Master level spells and/or you can summon two familiars at once. Hope this helps.
