Easy for me, most of my PCs are/were dual wielders WITH a sword. Two sword brands are the Skyforge Steel and the Blades (Katanas) *too bad the ninja outfit with the Blades swords have to be the "Hail Sithis" club, whenmost of my PCs destroy them and view the armor as a "disease".
Sword for me.
I like that they swing faster than axes and hammers, and I also prefer the look, along with a shield.

Sword because it's the most versatile weapon of all three , the Axe fits to Nords as said Champion of Nocturnal but it needs a shield to shine and for instance during the middle-ages in europe , a good sword made by a fine smith was far more expensive than an axe and sought after because the balance of the weapon and its ability to also thrust and parry more easily was considered more sophisticated as it allowed for more technique subtelties hence the nobles would often favor a sword as a side weapon
The axe and maces come handy against armoured opponents and when you use a shield , it's more sturdy and relies more on strength and stamina , so it depends the style of the person using it and its attributes , if he's more agile and quick a sword would probably suit him better in most cases
What about dual-weilding a Fork and Knife? I wonder what you would do if you were a Bandit and you saw the Dragonborn running at you with a Fork and Knife drawn. I think the Deer have experienced this before countless times.
