I have a Dutch gaming channel, and some bigger Dutch youtube channel asked me to make a let's play series for their channel. I decided to have a go with Skyrim, because I simply love it. But I don't want to be that overpowered character I always was, with the daedric armour and the best weapons. I want a unique playstyle / character build to have a go with. So do you have any unique and/or good suggestions?

As to the OP, find a good build that isn't seen on youtube. Something that people will look forward to seeing.

Try searching through the Skyrim Blog. Lots of interesting builds there.

An Orc shaman, a Khajiit bard or duelist, an Argonian battlemage, Nord assassin, a paladin, a pure restoration Mage, a scholar who doesn't fight for themselves unless they have to, and instead hires the services of mercenaries and sellswords to defend himself, a Redguard explorer.

Use your imagination.

I'm partial to a Khajiit wizard/scholar, but a shaman character could be fun too. A Forsworn would be difficult to roleplay in vanilla Skyrim, so maybe an Orc?

I've got another one. A Redguard pirate in light armor or if you feel adventurous, the Hammerfel garb.

The alternate start mod is very useful for creating a more unique backstory, are you going to use it?

I recommend playing as an Altmer pirate who is the Haknirdeathbrand-arine and uses dual scimitars.
