...start a new character?

Even on pc, I don't think there's any way of restarting quests. You can uninstall and re-install the Dawnguard/Dragonborn DLC to re-do the quests, but I wouldn't recommend it. You'll loose your stuff and screw up your save.

yep, start a new char..

avoid using Console Commands for such a thing, it could cause severe and unwanted "side effects"

Can't I do commands in the console? I used those to get remarried and re-do half of the civil war but I forgot where that post was and can't find it now...

I know its possible to just roll-back the quests...

If you don't know the codes yourself, it's better that you do not use them. You stand at very high odds of breaking something if you don't know what you're doing.

Just start a new character.

I say like the others, start a new character. That's what people usually do whrn they want to do quests again - or try a different playstyle. Or another RP. :)

If you have the civil war overhaul I think you have, it's recommended by the modder to start a new character just for the CW playthrough, IIRC. He practically had to work against the rest of the game to complete it, so if you mix it with a lot of other quests and questlines, on an old character, you are likely to screw something up.

Console commands to force quests to complete or become undone seems like a pretty sure way to screw up things as well. Better to save a lot and revert to an older save if you run into bugs.

Using the Console to re-do quests tends to break the quests and the save file.
