Started all over again..

I loved Skyrim, but I stopped playing. But now, I want to start over again, I roleplay quite a bit, but not like: Only walking, not sprinting / Eat every 5 hours or something like that.

So my question to you guys is, do you have some cool mods that change my game and give me a new experience of the best game ever? Maybe some overhauls? So the game is harder and I have to be more strategic at some points?

I've always had some minor mods, even from the beginning. I found that mods like frostfall and Skyre (along with armor mods and sneak mods for balancing) added a level of complexity that made skyrim "scary" again. They helped bring back the tension that I felt going into places the first time. Some people poo poo skyre because at high levels the difficulty kind of goes away. However I would argue it should be this way. If you are supposed to be the dragonborn and one of a kind then at some point you should be pretty powerful. To me the difficulty has an S-shaped curve from left to right. Frostfall makes you mindful of your surroundings and makes you do a gear/weather check before just running off. These are a few popular mods that I think deserve their praise.

Frostfall is a pretty good mod especially if you RP. It forces you to wear warm clothing in cold climates, going in water can be life threatening i.e. hypothermia and you also get to set up camps and campfires to keep you warm at night. So I think this'll be the mod for you if you want to make the game challenging.

You could try mods like Requiem or Skyrim Unleashed,both undo level scaling to a degree if I am not mistaken and help make the game feel more dangerous.
For loot you may want to give Morrowloot a try. What Morrowloot does is emulate the loot system in Morrowind. Which is to say that you find gear as opposed to buying it or smithing it. You can still buy and smith up to steel but Orc/Dwemer and higher you have to find and it's much rarer. Most of the high level stuff is hand placed as opposed to loot lists but are in locations that make sense. ie you find Dwemer gear in Dwemer ruins.

I second these for sure. And Skyre has a module that integrates frostfall into its perk overhaul system which is neat.

I know you said you don't eat every 5 hours and whatnot, buy I find Realistic Needs and Diseases very fun. Other than those, I think most of my mods are texture, lighting, or mesh mods.

And if you get SkyRe, make sure it's called Skyrim Redone. If you search skyre on nexus, one of the ones that comes up is SkyRealism, and it is not the one we're talking about. I think its called "t3nd0s skyrim redone" or something, that's the one you want.
