Sword'n'board. Extra apparel enchant slot, most defense, additional armor, can block arrows.
It really depends on the character. I have created many different ones and have tried to explore a wide variety of skill combinations. However, out of the ones listed, I favor 2H with Block.
Battlemages are a favored class for me and a Greatsword with a developed Block skill works very well.
For my Battlemages? While I actually mix and match clothing and both armors to get a particular look, they are mostly clad in Heavy Armor.
I love the sheer power of 2 handed weapons, for me dishing out as much damage as possible is paramount so naturally I would prefer 2 handed. Sword and board is for milk drinkers, REAL men run around with 6 foot war hammers.
Actually, REAL men stick to the shadows and kill enemies before they become enemies.
IF I slit your throat, that Sword/Axe ans shield won't defend you from that. Same for mages, if I kill you before you can cast an armor spell, it will be useless.

I like all the melee styles, but Spellsword/battlemage is my favorite play style so I guess 1h/spell. Heavy/light armor or cloth or a combo depend on the character. Because I do not like the way some of the armors, like http://www.uesp.net/wiki/File:SR-item-Ebony_Armor_Female.jpg look on females, I keep that in mind when planning my RP.
I tend to find two-handed a bit boring. You kind of just mash a single button to do anything in combat and wait for the enemy to die. Not much variety in a fight. One reason I like one-handed as it makes room for more strategy through a shield or magic.
I use both 2h and 1h+shield on my warrior characters. I switch them around as I see fit.
1H - sword only and shield bashing with a little magic sometimes depending on the combat situation, I can never get my sword swinging fast enough in this game, probably the PC mechanics and my razer mouse...lol..
I have yet to use a shield in any Elder Scrolls game. All of my fighters in Morrowind and Oblivion have used Greatswords only. When Skyrim came out I made a dual-wield character. I thought the character was fun, and may make another some day, but I still prefer 2-Handed swords.

Sword n' spell limits defense, but provides multiple ranges.
Two-hand gives increased damage and limited blocking, it's middle of the road.
Dual-wield maxes out damage, but with no defense and no distance attack aside from Shouts.
They all have pluses, they all have minuses. I have characters that use them all.
