For those who have done this quest, did you kill Sinding or let him live? I really want to get all the Daedric artifacts, but Sinding is such a nice guy and I'd feel terrible for killing him. What should I do?

I kill him. He let the nature of the beast overpower him and killed a small child.
Yes but he couldn't help himself, and I've looked past that. So is the Savior's skin a Daedric artifact or is only the ring an artifact?

I generally kill Sindin in his prison.
I'm sure both the Savior's Top and the ring counts as Daedric artifacts.
My first character did the quest and let Sinding live. My character believed that he really regretted what he had done and would try his best to stay away from humans so that he wouldn't cause more damage in the future. But since I had no use for the Ring of Hircine (that character was in the Companions but cured herself of the beast blood), I gave the ring to Aela and imagined that my character hinted to her that if she ever felt lonely, being the only werewolf left in the Companions, there was this other (male, single) werewolf living in a cave not too far away.
I think I might have done it with one of my other early characters, but I honestly don't remember if I let him live or not. None of the artifacts have interested me, so if I got one of them, I probably sold it or shoved it away on some cupboard together with some other unique loot.
thats still kinda... wrong. Say he [censored] a couple women because he couldn't "help it." would you let him go? I wouldn't. He committed a crime.

Both. I fake him out by leaving, get my reward, go back inside and tear his sick, child killing skin off then get rewarded again...this time for the right choice
You can always save just before, and then kill him, and get the skin. Then reload and save him and get the ring.
Kinda... I mean, his beastblood did overwhelm him, but it wasn't just his ordinary beastblood, but the beastblood going into overdrive through the curse of the ring.
If you really want all the goodies, put the Cursed Ring of Hircine in a container, and then do all that. You'll get both rings and the Hide.
You can do something similar with the Mace of Molag Bal.
