Final Morrowind Playthrough - Jedi Knight build

In the interest of getting on with my gaming life, I have decided to finally man up and beat Morrowind, Tribunal, and Bloodmoon with one character, and then retire the game (at least until I get the urge to play again). I'm thinking of a character that I've had in mind for a couple of years now, and was hoping to have some help with his build.

Race: Dunmer

Class: Jedi Knight (would like to play a noble knight who is good with mysticism, illusion)

Birthsign: Lady, Steed, or Lover (ideas?)

Majors: Long Blade, Athletics, Acrobatics, Unarmored, Speechcraft, Illusion?

Minors: Illusion, Mysticism, Alteration, Alchemy, Short Blade, Block, maybe Conjuration to summon bound items, Light Armor?

Factions: Redoran, Temple, Imperial Legion, Thieves Guild (only because I've never played through the Thieves Guild before, I'm going to RP it that he knows he can get valuable information out of them, and that he'd rather steal than kill).

Any thoughts?

Also, I have installed Morrowind on my new laptop I've been playing Skyrim on. Any suggestions for visual mods? Thanks in advance for your help!
