Idk about you guys but my goals in skyrim are to get 1. All the deadric artifacts 2. Become thane of each hold.
And 3. To get all the achievements. Also I'm not sure of this but you are able to become servants of sustain gods. Ex. I can get the blessing of Mara if I do missions for one of the monks there. Also for Debella. Of so I want together the blessing of each god, if that's possible, that'd be my 4th and final goal.

My only real goal is to have fun every time I play.

Of course! The main goal for each game is to have fun. But some games aren't fun for people, some games people love but it pisses them of at certain parts and they stop playing it :/ .
For me sometimes, I have to take a break every now and then cause I play on legendary. And I have to admit. It sometimes makes me rage quit at certain parts.
