I know there's a reason to collect the star bottle cap sarsaparilla quest, but are there any quests for any of the special nuka-cola bottles or the bottles of sunset sarsaparilla at all?

None that I'm aware of.

Well, you can brew your own cola at fires of your survival skill is up enough. I usually fill the bottles up in OWB at the Sink to sell them in the wastes.
