Another option you may consider, if you don't mind rolling up your sleeves a bit, is to try running Skyrim under WINE - http://www.winehq.org/. WINE is an Windows emulator and is free, but you may have to play around with configuration settings to get Skyrim working properly. I don't have any direct experience with it, but other posters on this forum do and can help you out if needed.
Before you buy anything, though, check the hardware on your Mac and compare it to the minimum system requirements for Skyrim, to make sure the machine is capable of running it.
Yes and no.
If you Dual Boot Windows 7 on Mac then Yes.
If you only have Apple operating system on Mac then No. (It's a native Windows Operating system game)

I am OCD with details, there is no such thing as "too many details" here. I would highly appreciate them, as I don't want to eff up my girlfriend's computer.
And HOW TOs all over the internet are telling me to install steam...
Why?
Because Steam is required for the game to run.
You'll still have to purchase Skyrim - the wrapper will just set up the environment for it to run in. Steam handles all DRM for licensed copies of Skyrim and is required to run it.
ETA - on that linked page, click the link beside "Port Database Entry". It will take you to a page where you can download the wrapper.
You might be able to us PlayonMac which uses wine to play games. You can install Steam using PlayonMac which than can install Skyrim, But Skyrim might not run that well if it does.
The best bet is to get Boot Camp and install a version of Windows that works with Boot Camp. I think it has to be Windows 7 or later for the latest version of Boot Camp.

These types of installs are not point and click and accept the defaults. If you don't fully understand why you are choosing something or doing something, then when it blows up in your face, it will be time to start groveling to your GF.
