I played all three, and I found Balfoyen and Stonefalls to be most interesting. In fact I found other alliances super-generic and boring. I was half expecting this though, because I love the Morrowind setting. My guess is that most people will play Ebonheart because of attachment to Morrowind and Skyrim. Hope I'm wrong, for the game's sake.

Daggerfall Covenant. I loved the last quest in Stros Mkai. Just Lovely. Don't wanna spoil anything tho for ppl that didn't play the beta. Needless to say, simply lovely.

I only went into the Daggerfall one, I'll keep the Aldmeri and Ebonheart for my 50+ and 50++ to see.

Daggerfall and Aldmeri were nice. I didn't like the Ebonheart very much.

Edit: let me just add too that there were several quests that really made me stop and think about what I was going to do. Usually it's fairly clear what the "Good" thing and the "Bad" thing is, but I liked the shades of grey...

I only got in for the last day of the beta and only played the Daggerfall. I don't know what would qualify the islands as generic and boring, but to me the experience was quite enjoyable. Nice story, nice micro dungeons, a lot of detail. I had a lot of fun exploring and figuring out what is where.

My only complaint is that those two starting islands fealt a bit small or cramped. Maybe if they were just a bit bigger, especially the orc island.
