Playing on expert, I use only iron weapons and am mostly unarmoured. I am a strict non-magic user and use no healing items apart from food. Every battle is a fight for survival, a 10 min dungeon crawl can take a few hours. I learned long ago that TES games become way too boring once you're overpowered. If I were to be using daedric gear, one shotting dragons with 50 healing potions in my invent... Id be thinking whats the point.

I have Chronic Restartitis, but I have managed to keep a tank-style Nord and reach level 25. I'm beginning to see what you mean. There aren't really any epic battles anymore. I dual-wield war axes and can take down dragons, etc. with a couple power attacks. Both war axes are enchanted with absorb health, so it's a very rare thing for me to drop below half health. I also have The Black Star, so my weapons are always charged. I purchased restore health potions from merchants so I could sell more of my loot. I have well over one hundred potions of restore health of various strengths. The game is ridiculously easy at this point, with the difficulty set at the default Adept setting.

I have got self-restriction down to a fine art. Check out the main rules I apply here..

All of them are to both increase immersion and give a more balanced sense of challenge.

Most important would be only carry a realistic carry amount. From weapons, armour, potions etc.. Though I recently stopped using healing potions and limited my arrows to 50. Medieval quivers could carry around 25 arrows, but that would be too restrictive.

Looks good! The Alik'r hood complements a lot of clothes nicely, it's a shame we don't see it more often.
