Ive been told you cant reset your skills (only attributes) but does that mean you cant unlearn a ability morph?

When you respec, it resets all your skills but keeps the XP that you have learned in that ability. So, if you have a skill morphed, you would be able to morph it after a respec and even choose the other option.
