I can't give Serana anything except items that have 0 weight. I currently haven't given her anything to carry except an enchanted ebony sword, but if I remove that she won't take it back either.

There is a bug that causes Serana's hood to duplicate multiple times. This is most likely what has happened in your game. There is a fix, but it's very tedious. She only wears (as far as i know) light armor class

The default armor shes wearing anyway is the royal vampire armor If you temper the armor, then you can give her a new suit of Vampire Royal and she will equip it.

It won't affect her appearance but it will improve her armor rating. She will also equip other armor types as long as they have a better armor rating than her Vampire Royal.
