You can also pretend that the books they read are written in their equivalent of our Braille. We, the viewers, read them in text, but they're feeling the bumps. That's how I role-play my blind character reading. Same if she's buying a book from a bookkeeper. She's asking, "Do you have a copy of The Oblivion Crisis in [insert name of their equivalent of our Braille]?"
She's a warrior, so I don't have her fight unless the other person is screaming (like they usually do when they want to kill her) and she can hear the spells/weapons. She only avoids traps when she has a companion who acts as her eyes and shouts a warning if she's about to get blasted by a fire trap. Same if there are enemies behind her that she is unaware of, providing if the enemy didn't shoot her first.
As for walking/running? It all depends, to be frank. My character isn't blind-'omg everything is pitch black!' She can see a little and the rest is up to basic memorization of where to go. If she's in a crowd, she walks slowly. If out in the open, she often breaks out in a quick jog.
EDIT: How do you work past the fact that you can see, but your character can't? Easy. You're just the person with the controller. A cameraman, if you will. You're watching your blind character do whatever he/she is doing. You can't talk to them, you can't interact with them. All you're doing is making them move around. The rest is in your imagination. How would a blind character in Tamriel handle things? How would he/she do this or that?
