I'm doing playthrough where I dont eat, drink, or sleep - ever. so no potions. So if during Waking Nightmare Quest (http://elderscrolls.wikia.com/wiki/Waking_Nightmare), I drink the Vaermina's Torpor (http://elderscrolls.wikia.com/wiki/Vaermina%27s_Torpor), would that be counted as Potion Consumed in my Statistics?

Well, drinking the Vaermina's Torpor would count as drinking a potion. But you NEED to drink it, otherwise you wont be able to complete the quest...
