This question could mean for your character or even for the whole game in general. After making a thread some time ago in Skyrim with the same subject, I ended up getting loads of new places to go, people to meet, things to see and so on and so forth, so I figured why not try it here?

I've never actually had a character whose Class was pre-determined by Baurus. Basically, I never ever went with the class the game suggested for me.

I've also never owned a house in Skingrad or Leyawiin. Honestly, I still barely know my way around these cities!

I've also never done Herma Mora's quest. And I've probably forgot a couple of other Daedric Shrine quests, too.

I had Baurus yell out my class -once- correctly, back on my early Ps3 days. Said something among the lines of "Mage help the emperor!" Or something among those lines When they were getting attacked.

And he guessed it right in the class selection part.

Hmm...I have not done several things.

I have yet to get a house in Skingrad or Leyawiin. Yet to go to Dive Rock...and several other things that I can't remember off hand.

I have not completed the main questline, the fighters guild questline, the DB questline or the SI main questline.

I know there are dungeons I have not visited yet.

Did you get the Water Breathing Mask yet? Ironically, getting it is one of the few things you need Water Breathing for in the game.

Well, I've only played a paltry... woah, that's gone up a lot in the last couple of weeks... 170 hours apparently! Anyway, that's been across about five or six characters who made it past level 1, and a couple of others who I got bored of/restarted. My list of I have nevers is probably going to include most of the game, so feel free to point and laugh at the noob

I have never reached level 15 (current character is approaching it)

I have never got past the bit in the MQ where you're in that cave full of The Enemy (I am being vague and unspoilery as I can, hopefully I've managed it...)

I have never completed any of the faction questlines

I have never played as a Nord, Imperial, Argonian or Redguard

I have never played as a male character

I have never owned a vanilla house (usually go with one of Emma-who-makes-Vilja's houses)

I have never closed more than a couple of Oblivion gates outside the MQ-specific ones

I have never enchanted an item (though my current mage will be doing soon, as she just found a grand-soul-filled grand soul gem - squee!)

I have never gone back to the Shivering Isles after my first visit, although I did like it, there's just so much to do in Cyrodiil... I might make a third character to explore it more fully, as the one who visited is a bit preoccupied with MQ and Mage's Guild stuff at the moment, plus Vilja

I have never had Baurus assume I was anything other than an Assassin/Agent (though I have only actually done the vanilla start about four times) and didn't actually realise until I saw a Let's Play that he was suggesting a class based on how you'd played up to that point (I imagine if he'd said pretty much any other class I'd have noticed, but those two are fairly similar and kind of fit the situation). Obviously all my characters approached that whole section as 'a bit freaked out by everything and not very experienced at anything, so going with the safest-seeming option - stealth and archery'

I think I've done everything possible over the years.
Although some side quests I have done only once a long time ago, so I don't even remember how to find them anymore.

It's actually easy to grab without any Water Breathing. You just have to know exactly where it is.
Then as soon as you find it, equip it.

Haven't 'beaten' Thieves Guild (though I'm working on it slowly) or Dark Brotherhood. Probably a zillion other little quests. It's funny because initially when I found this game in 2008, I was trying to do any quest that came my way. Now I can barely get anything done!

Never had an orc or Khajiit character. Never done a daedric quest. Never had a character level higher than whatever it is when glass bandits show up.

OH yeah, never been to Shivering Isles. That's the biggest, I think.

Up until about a year ago I had never begun Shivering Isles, the Dark Brotherhood, the Thieves Guild or the Mages Guild. In the last year or so I finished the Dark Brotherhood, Thieves Guild, Mages Guild and Arena for the first time ever. I did Mehrunes Razor for the first time a couple of weeks ago. But I've only done these factions once (including the main quest).

At the moment I've done just the first three quests in Shivering Isles (up to Xedilian), no side quests. I've done about 4 or 5 Fighters Guild quests. I've never done Knights of the Nine or Thieves Den and have done only one Daedric quest: Namira (again, just once).

I've never owned a house, invested in a shop or been a Vampire. I've never Enchanted, never done Spellmaking, never equipped or used a unique artifact. I've never ever done any Speechcraft in this game that wasn't required by a quest. I've never used a Blunt weapon or engaged in Hand-to-Hand combat. I've never played an Argonian, a Khajiit or an Imperial.

I've never maxed out any skill besides Blade and Light Armor. I've never gotten to Journeyman in Mercantile, Blunt, Block, Speechcraft, Hand to Hand, Illusion or Mysticism.

I've never seen Dive Rock. I've never put a single point into Speed, Luck or Personality on any character and I've never leveled any character past level 22.

I'm sure there's more. But that'll do for now.

Haven't explored the entirety of the Nibenay Basin and the Colovian Highlands. The Orrery plugin helps with the latter, though.

Bretons are the only race I've played for more than 15 hours, aside from one mentally-handicapped Khajiit archer I never finished. Watch him going door to door/ selling tongs and lucky heather. Dropping fine electric beats./Wearing trousers made of leather.

Don't think I've ever joined the Blades. Are there any perks to that?

Haven't played a vampire for long. I should get on that ASAP.

Haven't played KotN more than once.

So have not done over half of the game.

-Never played a Vampire for more than a few hours.

-Aside from Orcs or Imperials, I have not played the other races for more than an hour.

-I have not done those mini DLCs (Orrey, Castle, ect ect) They were not released on the Ps3, and I have not gotten to play them on my Pc...

-I have never gone over level 25, in fact the majority of my characters don't reach 10.

-Never discovered all the places.

-Never played a female.

-Done all the quest, I'm still getting decently surprised with new quest that I have not encountered due to not visiting certain cities as much.

There are probably things I don't know I haven't done, but these are things I know:

- Up until about a week ago, I had never done the shadowbanish quest, and I've never finished The Collector or run the other Umbacano quests ever.

- Certainly I've never gone into every dungeon, I'm still finding new ones.

- Never played a Khajiit or an Imperial (for more than testing purposes).

- Never closed all the Oblivion gates - although my current character will.

- Never done Hermeus Mora's quest.

- Never collected the entire 2920 book series, nor found a lot of the skill books for that matter

- Never gone to Lost Boy Cavern

- Never done the Harm's Folly quest.

- Never got kicked out of any guilds besides the DB

- Never done several of the master trainer quests

- Never played a mage who uses conjuration!

Those are the things that apply to me. For individual characters, they only experience a small fragment of the game.
