I think they basically torture the bulls for the Pamplona bull run to make them that way.
Anything I learnt from that Mythbusters Bull episode was ruined by the people on mythbusters.

To bad can't have someone who's actually raised cattle say something in here.
Oh wait, that's me! Bulls aren't always being aggressive. Sometimes they're just trying to play with you. It's not their fault you weigh under a ton.
