What direction should I go with my current character?

First off let me say thank you for the Fishy stick ;) (I think :o)

But It is with regret that I inform you, reader, that i believe this is the last topic to be carved from the jumble that was my first post.

I have talked about starting the game again with the best possible character, a miticulously planed quest schedule which would ensure my character is as powerful as can be, throughout the game, And i will probably pick a pure mage when I am to do that, but that is not now.

I still have a curent character to go, and I quite like him.
He is a lvl 29 'Arcane Guard' (Initially inspired by the battlemages guarding the arcane uninversity)
Heavily armoured archer/spellcaster/swordsman
71 marksman, 76 destruction, 80 blade, 90 restoration, 75 conjuration, 80 Illusion, 50 alchemy (I used this for a time but stopped) And a vampire because more powerful.

Major skills:
Blade, Bunt, Marksman, Heavy armour, Light Armour, Restoration, destruction

The idea with having some conflicting skills all as major was to both reduce the speed of leveling, as there are many minor skills i use aswell, and give me flexibility in my combat choices.
I think this mostly worked, although i think it could be improved upon if i realy wanted to slow down levelling. I think im at around 40 hours in this profile, so 2h per lvl.

The character is quite nice, ill switch to blade if i am rushed by too many enemies, am trapped in a small space, or just feel like it, but otherwise the idea was to fling powerful arrows and then when they get too close knock em down with powerful on touch spells.
(my speed is super low btw, its the one ATT i never increased, although i did make a fortify speed 60 points spell if i ever feel like running)

I just killed Emrail, from KOTN and i was dissipointed with how easy it was, he didnt come close to even damaging me. I fought his minions for a while and thought that was hard until i realised that they were always going to come back and i just had to take the stone away.

The Latest round of updating my spells armed me with these abilities:
Light 70ft for 100secs
Fortify speed 60 pts for 30secs
Restore health 40pts for 3 secs on self, invisibility for 5 seconds on self
Shield 20% for 40 seconds, summon Clannfear for 30 seconds (This combined with current armour grants 85protection)
Absorb health 40pts for 2 seconds on touch
Shock damage 50pts for 2 secs, paralyze for 1 sec on touch
Shock dmg 40pts for 2 secs on touch, invisibilty for 5 secs on self
Shock damage 30 pts for 2 secs in 10 ft on target, paralyze in 10 ft for 1 sec on target

My weapon enchantments (bow, dagger, longsword) are a variety of Weakness to magic/Weakness to element/elemental damage/soul trap.

A usual encounter with an enemy nowadays would be running up to it with a bow, shooting it, dodging its attack, shooting it again, causing it to recoil, and , if it gets too close, paralyzing it.Ill only use the summon/shield/heal for large groups of enemies, as thats the only time i need them. Same goes for absorb health.

I left this game and this character and came back to it after a while a few levels ago (25 i think) I left the difficulty where it was, but i cannot remember if it was the difficulty i used to play him on, or if it it was for a different character as i think though am not sure that difficulty is a menu option and not saved for each character

I have actually not completed any questline with this character, somehow, beside KOTN.
I have ventured into each of the guilds and the arena but havent completed them and havent evern started the main quest or Shivering Isles.

So I have alot to do, but the game feels too easy. I want a challenge. Id prefer not to adjust the difficulty now if i played with it at this level the whole time. But ill probably have to. Open to other suggestion though.
