What are some good guidelines to playing Skyrim? (xbox360)

So I'm going to give my other character a break for awhile and start up a new one. He isn't overpowered like my first character, but I want to take my new character another step forward. So far this is what I got, it isn't much, but it's a start.

Can only smith leather, hide, and jewelry/ No perk points can go toward smithing

No enchanting/alchemy

For RP purposes, I'm going to try to eat and sleep regularly

So far, that's pretty much all I got. The main reason I'm going to do limited smithing and no enchanting is because I want more excitement for looted items, which was beginning to go down with my other character. I also want to have a better RP experience as well. I'm also unsure which direction I want to take my new character, as I did a stealthy archer with my last one. Possibly thinking a warrior/mage. What do you guys think? Have any good advice with what I should do with my new character?

On a side note, I recently completed the main quest with my last character. Can I still have a good experience going through it again or is there a good way to play around it? Love to hear your guys thoughts and thanks in advance/\.

Try using mundane tools as weapons like hatchets, pickaxes, shovels and such.

Use basic cloths and throw in one or two leather parts.

Avoid the guards, bow to the upper class.

Ta-daa, you're a peasant! :)
