If your looking to add a bit more challenge to the game (by staying warm and dry) then Frostfall is the way to go. Also Frostfall has been made to work along side W&C and they will auto config eachother for compatibility so there's nothing that really need to be done on you part. The onlything you really need to do on Frostfall's end is set it up for how difficult you want i to be.
As far as starting mid play I dont think there's any issues with doing that but it would be best to read through the manual to see if there are any suggestions by the author on doing that.
If you dont already have one installed then I would also recomend a needs mod that makes you need food, water, and sleep. http://www.nexusmods.com/skyrim/mods/26228/? is the original go to mod that works really well and also tweaks diseases to where they are really something to worry about if not treated. The up and coming mod would be http://www.nexusmods.com/skyrim/mods/51473/? which works a little differently but gives you the same effect without the disease changes (Now has options to make diseases deadly). It also is more updated with newer mod community features such as widgets that appear on the hud.
I recommend it 100x. I love it and play it on hardcoe settings. It really changes the game when combining it with a hunger/thirst mod. You can customize it to be as lightweight as you want with the MCM.

So Frostfall is fully compatible with W&C and RNaD? I won't need any compatibility patches?
As far as I remember they all play real nice with each other and you can configure the settings to he way you want in MCM menus (SkyUI mod). I do not recall ever needing a patch to get those mods working together but check out the nexus pages for those mods for more details. For the most part those mod are meant to be played together.
I also suggest getting Cloaks of Skyrim and Winter is Coming mods since they add some cloaks designed to keep you warm and dry from the harsh Skyrim climate.

FF has been made to be compatible with W&C. If they detect eachother they will automatically configure themselves to be compatible. I think a few things in W&C get shut off because FF already has them and it works better to use FF's version of the assets, either way you dont need to do anything, unless you'd rather use FF's backpacks over W&C. You can use them both but FF's uses a different method that I tend to like better so I disable the extra gear from W&C.
RND is a completely different system that does not conflict with FF or W&C. The only issue you may encounter is getting wet (which would make you cold faster using FF's system) to collect water from streams/rivers but you dont need to get deep.

iNeed already has a system for collecting water from wells but RND does not. This mod will allow you collect water from otherwise useless wells in the major cities. The only difference is that iNeed also allows you to make any well do this by crafting a bucket to place on a well. Once that is done any well can be used. This is intended for wells added by mods so no compatibility patches are needed.
If your looking for a challenge play through then you might also want to consider lowering your default carry weight to ~100 and use backpacks from FF and another mod called http://www.nexusmods.com/skyrim/mods/16438/? for some extra immersive carry weight increases.
Also if you havnt already installed it I HIGHLY recommend http://www.nexusmods.com/skyrim/mods/14950/?. It adds a lot of new features to horses, the best one imo is the carry weight for horses. You can now store things on your horse (like using saddle bags) but you can set a limit to how much. I use 200.
These cloaks are also VERY useful with FF as they keep you warm or dry.
